Time is running out to submit your favorite horseradish recipe for a new Horseradish Festival Cookbook.
Share a favorite recipe for appetizers, soups, salads, vegetables, main entrees, breads, rolls, desserts or beverages – as long as horseradish is the main ingredient.
Consider recipes using seafood or shellfish, beef, pork, chicken, eggs, cheese, beans, vegetarian products, fruits, vegetables, grains, and pasta.
The Horseradish Festival Cookbook is a fundraiser, the proceeds of which will go to the Horseradish Festival to cover the costs associated with future festivals. By submitting a recipe, the author/cook agrees to give permission to the Horseradish Festival Committee to freely use their original recipe in this cookbook, and any other future publications with no additional permission required.
Add any interesting horseradish quips and folklore along with the recipe. These additions should be no longer than 500 words. The committee is also gathering biographies on local horseradish growers, and these essays have a maximum of 200-300 words. Submissions of a horseradish glossary (a list of horseradish terms to know, grow, and profit from) will also be included. Submissions may be edited due to space restrictions.
Simply attach a separate entry form with each recipe submitted. Use the entry form below or stop by the Collinsville Chamber of Commerce Office for a form. Please type or neatly print each recipe on the front side of a piece of paper.
